This homemade egg drop soup gets a fresh twist with Local Bounti’s Organic Living Watercress and tumeric, adding a peppery bite and nutrient-dense boost to every spoonful. - 4 cups low chicken stock
- 3/4 teaspoon chicken bouillon powder
- 1/4 teaspoon white pepper
- 1/2 teaspoon turmeric
- 3 tablespoons cornstarch (mixed with 1/3 cup water
- 3 eggs (lightly beaten)
- 1/2 teaspoon sesame oil
- 1 package of Local Bounti Organic Living Watercress, rinsed and roughly chopped
Directions for the Soup:
- Rinse and lightly dry off the Local Bounti Living Watercress. Remove the roots and set aside.
- Crack the eggs into a small bowl and whisk lightly.
- In a medium sauce pan, bring the four cups of chicken stock up to a simmer over medium heat. Add in the seasonings including chicken bouillon powder, white pepper, and turmeric.
- Once simmering, add in the cornstarch and water slurry. Then, add in the whisked eggs and cook for two to three minutes. Once cooked, turn the heat off and add in the sesame oil and the chopped watercress. The residual heat will cook the watercress.
- Transfer into bowls and serve with a few leaves of fresh watercress on top. Enjoy!
